Interesting. I was going to try and answer your question but figured I'd test it for myself first on one of the MTP's I've got here. According to everything I can find that's been published by Serato (incl videos, website and the quickstart manual), it should be possible to remap those buttons on the MixTrack Pro II. However, I've just tried it out and you can't. Or at least, I couldn't.
The software wasn't letting me remap those buttons at all which leads me to believe they are acting as shift keys (which makes sense considering they're called pitch shift after all) and the 'Allow Hardware Remapping' feature doesn't allow the remapping of shift keys (yet). If this is correct you won't be able to use those buttons as you'd hoped.
What I also found interesting / unexpected was when I tried mapping the left gain to another knob, moving it caused BOTH gain controls to react. I could assign them separately, but whatever I assigned them to, both gains would react, almost as if the MTP isn't capable of allowing independant gain controls or something.
This could be a bug or something unique to my setup though, but it's worth mentioning because if this is also intentional, it REALLY scuppers your idea of having any practical gain control from your hardware.
